Classic Greek Salad

Greek vinaigrette of Greek seasoning, lemon juice, white wine vinegar, and olive oil tossed with cucumber, red onion, Kalamata olives, Romaine lettuce and cherry tomatoes.
Ingredients -
2 tablespoons Greek Seasoning
2 tablespoons Fresh Lemon Juice
2 tablespoons White Wine Vinegar
1/2 cup Olive Oil
1/4 cup crumbled Feta Cheese
1 head Romaine Lettuce, washed, dried and torn into bite-size pieces.
1 medium Cucumber, peeled, halved, seeded and sliced
1/2 cup Kalamata or Black Pitted Olives, sliced
1 cup Cherry Tomatoes, cut in half
1/2 medium Red Onion, cut into rings
 
Preparation:

1. In a small bowl, whisk Greek seasoning, fresh lemon juice, white wine vinegar and olive oil.

2. Gently stir in feta cheese. Refrigerate minimum of 15 minutes.

3. Add romaine lettuce, cucumber, olives, tomatoes and red onion to large serving bowl.

4. When ready to serve, stir dressing and pour over vegetables. Toss to coat.

Feta Cheese
Feta cheese has a tangy, salty taste. For Greek salads look for a semi hard texture and choose a cheese in the mild to sharp range, depending on your taste.

Kalamata or Black Pitted Olives
Kalamata olives are readily available in markets and specialty food stores. Packaged in olive oil or vinegar, the olives have a flavor that can be rich and fruity.
