Easy Greek Salad

Easy salad of spinach, lettuce, tomatoes, cucumber, onion, olives, Feta cheese tossed with homemade Greek lemon vinaigrette dressing.
Ingredients -
7 ounces Fresh Spinach, torn into bite-size pieces
4 medium Green Onions, sliced
1 head Boston Lettuce, torn into bite-size pieces
3 medium Tomatoes, cut into wedges
1 medium Cucumber, sliced
24 pitted Ripe Olives
1/2 cup crumbled Feta Cheese

Lemon Dressing:
1/4 cup Vegetable Oil
2 tablespoons Fresh Lemon Juice
1/2 teaspoon Sugar
1 1/2 teaspoons Dijon Mustard
1/4 teaspoon Salt
1/8 teaspoon Pepper

 
Preparation:

1. Shake vegetable oil, fresh lemon juice, sugar, Dijon mustard, salt and pepper in tightly covered container.

2. Add fresh spinach, green onions, Boston lettuce, tomatoes, cucumber, ripe olives, and feta cheese to large bowl.

3. Pour lemon dressing over vegetables and toss to coat.

Fresh Spinach
Fresh spinach and baby spinach varieties are readily available. Spinach leaves can also be found pre-cut and packaged with other mixed green varieties.
